RED SQUIRRELS & WOODPECKERS
Red squirrels are native to Ireland and during the Autumn they are often easier to spot as the trees shed their leaves. These creatures play an important role in our ecosystems by helping forests regenerate, burying seeds that later grow into trees.
Once under threat from the introduction of grey squirrels, the red squirrel population has begun to recover in many areas thanks to conservation efforts. So, if you’re walking through the woodlands around Cashel this season, look out for a flash of russet fur and a bushy tail.
And, if you find yourself on a Coolmore tour, keep your eyes peeled for the bird boxes and woodpeckers. Once lost to Ireland after widespread deforestation in the 17th and 18th centuries, Greater Spotted Woodpeckers have naturally resettled over the past 20 years and many now make these boxes their home.
APPLES
Irish apple season is here, and there’s no better time to savour this autumn favourite. We are fortunate to have The Apple Farm - a central member of the Tipperary Food Producers and trusted supplier to Cashel Palace - right on our doorstep.
Growing apples since 1973, Con Traas’ family-run farm is a true part of the region’s rich food heritage. Guests looking for an authentic taste of Tipperary can visit the farm, explore its orchards and sample a variety of fresh produce and juices. A perfect seasonal outing.
Traas’ apples may be sampled in a number of dishes at Cashel Palace including these warm oat bowls (pictured), which are available from Recharge Health Bar.
